The green Chile I use can’t be found anywhere but in Hatch, New Mexico. When I make this flavor, I can never seem to keep a batch for myself, it seems to disappear even from my hiding spots. Although this particular Chile is known to be pretty spicy, I have toned it down to a customer friendly level.
